Pumpkin Chia Pudding – Dairy Free!

This is a delicious fall snack that is great for your brain, blood sugar levels and your bowels. Chia seeds are gluten-free and low on the glycemic index. They are full of fiber and nutrients that promote the mood-enhancing neurotransmitter serotonin. Enjoy with a cup of tea in the afternoon and satisfy your sweet tooth in a healthy way.

 

Ingredients:

  • 2 cups of unsweetened almond milk
  • 1 cup of pumpkin puree
  • 2 tbsp of agave syrup
  • 4 tbsp of chia seeds (aka Selba seeds)
  • 2 teaspoons of vanilla
  • 1 tsp of ground cinnamon
  • ½ tsp of ground nutmeg
  • pinch of ground clove

 

Directions

This recipe is simple to make. Combine all of the ingredients in a large sealable container (preferably glass). Seal tightly and shake well, until all of the ingredients are thoroughly mixed. Place in the fridge overnight and then enjoy!
