Pomegranate Pumpkin Seed Salad – Promoting Prostate Health

It’s Movember and the timing is perfect, pomegranates are in season! Numerous studies have cited the benefits of pomegranate for prostate cancer prevention. Pumpkin seeds are rich in phytosterols and zinc, nutrients that feed the prostate and support optimal health and function. This delicious salad is an easy way to get the nutrients you need to support prostate health.

Ingredients:

  •  10 cups of mixed greens
  • 1 pomegranate, seeds extracted
  • 1 cup of pumpkin seeds toasted

Salad Dressing:

  • 1 small shallot minced
  • 4 tbsp of apple cider vinegar
  • ½ cup of extra virgin olive oil
  • 2 tsp of Herbamare (or sea salt and pepper)

Directions

Extract the seeds from a ripe pomegranate. Toss ½ the pumpkin seeds and ½ the pomegranate seeds with the mixed greens. Whisk salad dressing ingredients together or shake in a glass jar. Toss the greens with dressing and then top the salad with remaining pumpkin and pomegranate seeds.
