Nutrition for an Awesome New Year: Sesame Ginger Soba Noodles
New year, new you! The beginning of a new year is a great time to reconfirm your health and wellness goals. We here at IHI have teamed up with some of our friends to bring you fun, easy and delicious recipes to help keep you on the right track all winter long!
Sesame Ginger Soba Noodles by The Living Kitchen
Ingredients:
2 servings of soba noodles (made with buckwheat flour, gluten free)
2 cups zucchini, chopped in slices
2 cups carrots, diced
1 cup broccoli, chopped in florets
1 cup red pepper, diced
handful black sesame seeds
Dressing:
1/4 cup tahini (sesame butter)
2 Tbsp sesame oil
2 Tbsp dark maple syrup or unrefined honey
2 Tbsp tamari (gluten free soy sauce)
2 tsp fresh ginger root, grated finely
Directions:
1. Mix together the dressing ingredients until creamy and smooth.
2. Lightly steam the vegetables.
3. Boil a pot of water and cook the soba noodles for 4-5 minutes (according to package instructions).
4. Toss all ingredients together in a bowl. Sprinkle black sesame seeds on top.
